The year was 1992 when we made the first pure single-variety pasta. Among the first to taste our Senatore Cappelli were Aimo and Nadia Moroni, Gianfranco Vissani and George De Luca. Nadia at Aimo e Nadia called their official spaghetti with scallions la Cappelli. That was when Gianfranco Vissani began cooking on TV for the UnoMattina program, and Ilaria Moscato asked who that politician was and how long did it take to cook. George De Luca wanted it immediately for that temple of gastronomy called Dean and De Luca in New York, though it was a challenge getting customers to understand it. By now Spaghetti Senatore Cappelli is proud to be present on menus of the world’s greatest restaurants. With full merit. It has intense, imposing, zesty flavor. Cook it for 8 or 9 minutes and then add some of the cooking water to the pan to sauté it with a sauce.

Senatore Cappelli durum wheat.
The variety of durum wheat known as Senatore Cappelli was selected in the early 20th century by Nazareno Strampelli, recognized internationally as the father of modern cereal culture. The variety attained record yields per hectare that were unsurpassed until the 1960s. But then its cultivation virtually ceased, as it was superseded by more productive varieties. In October 1991, we sowed 905 kilograms of Senatore Cappelli durum wheat. Our first harvest was in June 1992. In the autumn of that same year we started producing our Senatore Cappelli Spaghetti and Spaghettini as the world’s first single-variety durum wheat pasta. Senatore Cappelli is a beautiful plant, standing over 180 centimeters tall. The ears, of a warm ash blonde color, have long black whiskers and very large grains.
